A type of pasta made by artisans in southern Italy that have a long heritage of producing unique and high quality pastas. Spugnole Pasta has a shape that looks somewhat like radiatori pasta but slightly different. The appearance is similar to a frilly piece of cloth with wavy embossed ridges that wrap up into a coiled centerpiece. The Spugnole Pasta is uniquely shaped by the bronze dyes used to produce this variety of pasta. Due to the rough surface on the outside and the inner configurations of the ridges, the pasta holds sauces well. Spugnole Pasta is not readily available and can be most easily found in specialty shops selling unique foods.
