A type of Tuna that may be referred to as Oceanic Tuna or Bonito Tuna that comes from the Atlantic and Pacific oceans. Typically sold in weights of 5 to 8 pounds, a Skipjack can grow to over 70 pounds. Available fresh, frozen, canned or dried, this type of Tuna is commonly used for various Asian recipes in both fresh and dried forms. As a dried product, Skipjack Tuna is shaved into flakes for use in Japan where it is referred to as a katsuo and the flakes are known as katsuobushi which are typically used to make a soup stock known as dashi.
