A tall cereal grass cultivated in Asia and Africa, but rarely found in the Western world. The grain is named “Job’s Tears” because its shape is similar to a teardrop. When the hull is removed and the grain is polished, it resembles polished barley and it is often considered to be a form of barley.

Like many other grains, Job’s Tears can be prepared by boiling or steaming. It can be served as is or it can be added to soups and casseroles. It is an excellent source of iron and calcium and it is reported that it is beneficial in revitalizing the blood and nervous system. It is often difficult to find in the United States, but it may be purchased by mail order and it is sometimes found in natural food stores. The grain can be stored for several months in the refrigerator if it is sealed in an airtight container or it can be stored for 6 months or more if kept in the freezer.
