Known by its historical significance as a food preservative during earlier times, this variety of natural salt comes from the evaporation ponds surrounding the Portuguese ocean waters. Bright white in color with a translucent quality, Portuguese sea salts are harvested as they are deposited on the surface of the water just prior to sinking which is similar to the French process when harvesting their salt known as Fleur de Sel. Thus, the Portuguese refer to their sea salt as "Flor de Sal" as a means to compete against the French Fleur de Sel, both translated to mean the "flower of salt". Crunchy yet delicate in texture with a lower moisture content than many other salts, Portuguese sea salts are typically used as table salts for seasoning a wide variety of food dishes served daily, providing a slightly sweeter and earthier flavor than traditional table salt.
