A variety of olive that is grown in Italy, most notaly in areas around Sicily. Bright green in color, the Castelvetrano Olive is harvested when it is young and is brine cured. Medium in size and oval in shape, the Castelvetrano provides a mild and slightly salty flavor when served as a table olive or for use in salads. Similarly, it it often used to enhance the taste of roasted meats, poultry and fish. Castelvetrano Olives are also processed into rich flavored olive oils for cooking or dipping.
