Commonly served in Moroccan food dishes, this meat product consists of lamb that is ground, mixed with herbs, spices and seasonings such as garlic, cumin, chili paste, and cayenne pepper, and then stuffed into a sausage casing. In addition to an all lamb product, the Merquez may also consist of a combination of beef and lamb mixed with a variety of seasonings. Spicy in flavor, Merquez sausage can be served as a side dish to a meal, as an ingredient in salads, soups and baked dishes, as an ingredient with eggs or egg dishes, or as a snack, which often occurs in some European countries as road and street vendors grill this sausage outside.

Moroccan lamb sausage is another name for Merquez sausage and it may also be referred to as a Mergeza lamb sausage. Mergeza or Merguez is a Tunsian lamb sausage that tastes like Merquez sausage, providing a hot and spicy flavor similar to Merquez. However, the seasonings for Mergeza are slightly more varied than those for Merquez, often adding items such as Pomegranate juice, thyme, ginger, and cinnamon as additional ingredients.
