A fish found in the colder waters of northern oceans that is very similar to a cod, except they have a flattened head. There are several varieties of Hake that are common to waters near America and others that are more common near Europe, some of which are most often referred to as Gemfish. The Hake has thick, firm white meat that provides a delicate and tasty flavor when baked, grilled or fried. This fish may be used as a substitute in recipes that require cod or flounder.
