An East Indian paste from the Madras region of India which is now referred to as Chennal. It is a blend of spices and other ingredients that is used to mix into food dishes in order to create a flavorful curry sauce. This paste provides a slightly bitter (cumin spice), yet somewhat fruity, and as is traditional a very spicy flavor. Typical ingredients in the paste may include coriander, cilantro, salt, cumin, turmeric, chile pepper, ginger, garlic, cardamon, paprika, cinnamon, and other spices mixed with canola oil to form a paste for seasoning vegetables, meat, and fish dishes served over rice.
