A combination of water and liquid processed from clam meat that has been cooked. The blend of liquids is used as a cooking base or stock to enhance the flavor of soups, chowders, bouillabaisse, paella, and seafood dishes. It can also be used as a substitute for some seafood stocks when making soups such as clam chowder or crab and shrimp dishes. Clam Juice provides a mild clam flavor with a salty overtone when added to food dishes as well as some cocktail beverages, such as Bloody Marys or specialty clam drinks. Since the Clam Juice may contain a significant amount of sodium, it is best to wait on salting the foods being prepared until after the Juice has been added and the food tasted prior to serving.
