A very rich, small European cake that is prepared with a rich yeast and butter dough flavored with rum. Referred to as a babas au rhum in Poland, a Baba Cake is made with raisins or currants that are enhanced with the flavor of the rum added to the cake. Special molds known a Baba molds or Matfer molds that hold only 4 to 6 ounces of contents are used for making these small, individual round cakes. The batter for the Baba Cake is poured into the cup and allowed to bake up and over the top so it forms a dome similar to the top of a muffin. After the cake has been baked, a simple syrup with rum is brushed on the outside of the cake to sweeten the taste.
