Welcome. I am not sure of a cookbook, but I will check with a few people that I know and get back to you if I find out anything. I do know that splenda.com has some recipes and advice for people that have been newly diagnosed with diabetes, you may want to check that out.

Hi Nicolle, I searched for a recipe and this seemed to have great reviews: Preheat oven to 375 Bring to boil until white foam appears: 1/2 cup vegetable oil 1/3 cup water 1/3 cup milk 1 tsp salt (optional) Remove from heat and add to hot mixture: 2 cups tapioca flour with wooden spoon. Let set 15 min. Mix in: 2 eggs 6 oz grated cheddar cheese Form balls (1 1/2 inches round) with greased hands. Bake on lightly greased sheet. Bake 15 to 20 minutes. I may try to make it this weekend, let me know what you think!

I have a teflon pan that has a hard black coating which makes food stick when cooking. How can I remove it without scratching the teflon?

The crock-pot lasanga is very good too, I've never heard of being able to make something like lasagna in a crock pot!
