Andes Mint Cookies 5 Recipe

Thin and minty, these cookies are perfect for any occasion, especially Christmas. These cookies are perfect to put in the freezer and serve whenever needed, too.
Andes Mint Cookies 5 Recipe

Ingredients
  • 2 packages Andes mints, unwrapped
  • 3/4 cup butter
  • 1 1/2 cups brown sugar, packed
  • 2 tablespoons water
  • 12 ounces semisweet chocolate chips
  • 2 eggs
  • 2 1/2 cups all-purpose flour
  • 1 1/4 teaspoons baking soda
Directions
In a saucepan, heat butter, sugar and water. Add chocolate chips and stir until partially melted. Remove from heat and stir until all chips are melted. Set aside to cool for 10 minutes.

Meanwhile, beat eggs at high speed. Add flour and baking soda and beat until blended. Add chocolate mixture and blend well. Chill dough for 1 hour.

Line baking sheets with parchment. Roll dough into 1" diameter balls. Bake at 350° for 10-12 minutes.

Place unwrapped mint on top of each warm cookies as soon as you remove them from the oven. After the mints have softened, spread the mint over the cookies with a spoon. Let the chocolate set at room temperature.


Christmas Wreath Cookies Recipe

Ingredients
  • 1 stick butter
  • 30 marshmallows (large)
  • 1 teaspoon vanilla
  • 2 teaspoons green food coloring
  • 4 cups cornflakes
  • Red hot candies
Directions
In a saucepan melt butter and marshmallows, stirring frequently. Add vanilla and food coloring.

Pour mixture over cornflakes and stir well.

Drop by spoonful onto waxed paper and shape into wreaths. While cookie wreaths are warm, decorate with red hot candies.

Ingredients
  • 1 cup powdered sugar
  • 1 cup sugar
  • 2 sticks butter
  • 2 eggs
  • 1 teaspoon vanilla
  • 1 cup oil
  • 5 cups flour
  • 1 teaspoon baking soda
Directions
Mix powdered sugar, sugar, butter, eggs, vanilla and oil.

Sift flour and baking soda together. Fold into butter and sugar mixture. Cover tightly with plastic wrap and chill in refrigerator overnight.

Roll a teaspoon of dough into a ball. Place 2" apart on greased cookie sheet, flatten slightly with a glass dipped in sugar. May color sugar if desired. Bake at 350° for 8-10 minutes.

Ingredients
  • 2 cups sugar
  • 1 cup corn syrup
  • 1/2 cup water
  • 3 tablespoons butter or margarine
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 2 cups salted cashews
Directions
In a large saucepan, combine sugar, corn syrup and water; bring to a boil, stirring constantly, until sugar is dissolved.

Cook, without stirring, over medium heat until a candy thermometer reads 300 degrees F (hard-crack stage).

Remove from the heat; stir in butter, vanilla and baking soda. Add cashews. Pour into a greased 15x10x1 inch baking pan. Cool; break into pieces.

  • 1 cup Karo corn syrup
  • 1 cup Sugar
  • 1 cup peanut butter
  • 8 cups popcorn
  • 1 package peanut M&Ms
Directions
Boil corn syrup and sugar until clear. Remove from heat.

Add peanut butter and pour over popcorn and M&Ms. Stir.

You can spread out on cookie sheets or waxed paper if you want it in small chunks.

NOTE: The same recipe can be poured over 6-7 cups Rice Krispies and topped with melted chocolate chips and peanut butter.

  • 50 miniature salted pretzels (traditional shape)
  • 50 milk chocolate caramel center candies (Rolos)
  • 50 pecan halves
Directions
Preheat oven to 200°.

Spread pretzels on ungreased cookie sheet. Top each with 1 candy. Place cookie sheet in oven for 2 to 2 1/2 minutes, or until candy has softened.

Remove from oven, and top each slightly softened candy with a pecan half. Allow to set in the refrigerator, and then store in a tightly sealed container.

Serve at room temperature and enjoy!
