I cannot stand the texture of zucchini, but would love to incorporate it into some meals. Does anyone have a recipe that beefs or crisps up the texture without frying?

Beef and Zucchini makes a quick evening meal or a great meal prep solution. Full of flavor and nutrition, it is ready is about 30 minutes.
Heat oil. Quickly stir-fry beef over high, and season with garlic, salt and pepper. Add zucchini and stir-fry briefly. Season with green onion, sesame seeds and oil, soy sauce, chili pepper, and salt. Return beef to pan, stir once to combine, and transfer to serving plate. Garnish with shredded chili.

My boyfriend dislikes all veggies and he loves grilled stuffed zucchini with sausage tomatoes breadcrumbs and cheese. Brown some sausage and set aside. Cut a very large zucchini in half long ways and scoop out the insides. Brush the whole thing with olive oil and grill the cut side first. While that’s cooking dice a small tomato and some of the insides of the zucchini. Mix together with the sausage (I prefer spicy but you can use whatever kind you like), some Italian breadcrumbs and shredded parmigian cheese (the powder kind wont melt right) when the cut side of the zucchini has some nice grill marks on it remove and fill the cavity with the sausage mix. Return to grill bottom side down on med low and put the lid down. Once the zucchini softens remove (you’ll need two spatulas or have whatever you’re serving it on right there so you can slide it off the grill) and sprinkle with some more breadcrumbs and cheese. Slice horizontally and serve hot.

Has anyone dehydrated tomatoes before? I was wondering how to dry them. Do you just dry the tomatoes or do you have to season them or do anything special to them before you dry them? I have had them before and they are great to snack on.
