DAWN EGGS ON GARLIC TOASTS
DAWN EGGS ON GARLIC TOASTS

Most of my recipes are ideal for a good lunch or dinner, but would start the morning with this recipe:
For 6 servings you need:
¼ Margarine
3 minced garlic cloves
6 slices of bread without crust
1 ripe tomato chopped into small cubes
1 tablespoon chopped onion
6 chopped mushrooms
6 tablespoons corn kernels
6 eggs
¼ cup milk
¼ cup Parmesan cheese
Salt to taste
How to prepare?
Fry the garlic in half the margarine and spread the bread with this mixture. Take the bread to the pan where garlic was fried and roast them until golden brown. In the remaining butter fry the onion, without letting brown, add tomatoes, mushrooms and corn. Leave fry for about five minutes and add the eggs with the milk and let cook to taste.
Serve the eggs on toast and sprinkled with parmesan cheese.

Has anyone dehydrated tomatoes before? I was wondering how to dry them. Do you just dry the tomatoes or do you have to season them or do anything special to them before you dry them? I have had them before and they are great to snack on.
