Aren't Olive, Canola, Sunflower, etc., all different kinds of "vegetable" oils? My daughter has a recipe that calls for "vegetable oil" and is concerned that the oils we have in the cupboard (above) are unacceptable.

There are a couple of things you want to look at when selecting the right type of oil for cooking. There''''s the oil burning point, when it burns it loses it''''s nutrients. Oil with higher burning point are good candidates for high heat cooking. The other thing to pay attention to is whether the oil is processed or natural, natural oil contains more nutrient than processed oil. Olive oil(virgin) would certainly contain more nutrients (non-processed) than vegetable oil ( processed, composed of vegetables such as soy,corn,canola ..etc).
I suspect the recipe in question is a High heat recipe, which makes vegetable oil a good fit... just a guess.
