I was diagnosed type 2 Diabetic 2004.
He needs to find a Diabetic specialist who is a diabetic educator and a dietitain. If one is not in your area he may have to travel waiting lists for an appointment could be months.Or see a Doctor who can refer him to a specialist or a Diabetic courses, that teach nutrician and about lifestyle changes and medicine.another alternative is see a Diaticin who can help him with the Diabetic Diet.American Diabetes.com

Joslin Diabetes Gourmet Cook Book printed by Bantam Books, hardcover - you can get it at Borders or Barnes & Noble for $25 - $30. Written by the nutrition doctors and staff at the Joslin Diabetes Center. Great recipes, with exchange info so you can see what points each dish has.Lots of good info on how to manage diabetes. Even has suggested pairings for complete meals, too.

Welcome. I am not sure of a cookbook, but I will check with a few people that I know and get back to you if I find out anything. I do know that splenda.com has some recipes and advice for people that have been newly diagnosed with diabetes, you may want to check that out.

Has anyone dehydrated tomatoes before? I was wondering how to dry them. Do you just dry the tomatoes or do you have to season them or do anything special to them before you dry them? I have had them before and they are great to snack on.
