A common Jewish dish, from France, which is made with kosher meats. Translated, the term refers to a dish garnished (garni) with sauerkraut (choucroutte). While this dish is similar to a casserole recipe handed down through generations of family, it is now made with a variety of different ingredients by different chefs. Many of the basic components however, remain the same, which are meats such as pork and sausage, sauerkraut, potatoes, onions, dry white wine, chicken or beef stock, and peppercorns with other seasonings.
